my first PinterTest Kitchen

So I found this recipe a while back that I've been wanting to try....this made it the perfect opportunity.  Here's the  blog I pinned it from.   It's for a pumpkin spice frappe...super easy...one thing to prep in advance: 1 1/2 cups of frozen coffee (I used pumpkin flavored...naturally).  I made the coffee last night and stuck it in the freezer.  This morning when I got up, I set it on the counter to thaw for a few hours.  When it was nice and thawed, I dumped all these ingredients into the blender:
1 1/2 cups thawed coffee
2 Tbsp. pumpkin, canned
1/2 tsp. vanilla extract
1/4 tsp. pumpkin spice, ground
1 tsp. stevia
1/2 cup unsweetened coconut milk from a carton, not canned 


I blended it all up and got 2 glasses full....delish!  The recipe calls for whipped cream and ground cinnamon to garnish the top, but of course we didn't have any whipped cream...shoulda checked first!  Oh well...still a yummy treat.

  1. this beverage is responsible for me being fatter and broker this fall. making it at home will help in one aspect. now someone needs to pin a zero calorie whipped cream. thanks for linking up! so happy that you did!
